Little Bird Bakery and Espresso is one of those rare shops that do everything very well with the utmost attention for perfection. All the food there is made daily from scratch with locally sourced food and ingredients, you will never find a fixed menu, because it changes with what is in season, making Little Bird a foodies nirvana.
The coffee and espresso is modeled after the finer espresso shops in Europe, there are no syrups only caramel and dark Belgium chocolate, all made expertly there at Little Bird. Once you have your espresso drink made that way, going back to all the sugary syrups seems a waste of good espresso.
Where is this little slice of culinary heaven? Right in Old Town Fort Collins, CO, what a perfect place to take a break and watch the world go by at its own hectic pace. The staff we met there were phenomenal, they know what the owners vision is, and how everything is made and the reasons why there is such a commitment to doing everything right. The service was spot on and very pleasant, keeping in mind the customer service and making every visit to Little Bird a memorable one.
We were blown away by Little Bird, I have been in my share of bakeries posing as coffee shops and coffee shops posing as bakeries and Neither very successful, but Little Bird is doing it all very well.
